In a bowl, add urad dal along with water to rinse. Mix well and drain for any impurities.
Add the washed urad dal to a pressure cooker along with 250ml water, 1 tsp salt, turmeric powder and coriander powder. Mix well, cover with the lid and cook for 2 whistles. Keep aside for the pressure to subside.
In a deep pan, heat oil over medium heat, add cumin seeds along with heeng. Saute for a few seconds and add onion. Cook for 5-6 minutes until golden brown and add ginger-garlic paste. Saute for another minute.
Add tomatoes along with salt to taste, cumin powder, red chilli powder, mango powder and garam masala. Mix well, cover and cook for 10 minutes until the tomatoes become soft.
After 10 remove the cover and add the cooked dal. Mix well and cook for 2-3 minutes
Once cooked, remove from heat, transfer to a serving bowl, garnish with coriander and serve hot with roti.
